Saw It, Pinned It, Did It

I feel like such a fat kid because all of my Pinterest-inspired creations happen in the kitchen. I don't forsee that changing anytime soon because my amazing Ohio Lax teammates bought me this bad boy for my wedding shower!


Last night I was craving something "carby" and remembered this recipe that I pinned from Little B's Healthy Habits. All of her recipes are clean and she has some amazing workouts posted. From time to time, she even does v-logs describing her supplement routine, etc.

The original pin looked delicious and healthy - egg whites, greek yogurt instead of oil, truvia as a replacement for sugar and rolled oats instead of flour (have I mentioned I don't do well with wheat even though I LOVE it?!)

The recipe is fool-proof and was a success. I taste-tested one last night and had two for breakfast this morning. They are so easy to just grab and take with you if you are in a rush in the morning...like I am EVERY morning...Here are the ingredients and directions:




Ingredients

2 cups rolled oats
1 medium apple, chopped into small cubes, skin on
2 scoops whey protein powder - I used cake batter flavored Muscle Milk Light
4 egg whites
1 cup non fat Greek yogurt
6 packets of Truvia (you may want to add more if you like your baked goods sweet)
2 tsp cinnamon
1/2 tsp baking powder
pinch of salt

Directions


1. Pre heat oven to 350 degrees. Prepare muffin tin.
2. Place all ingredients in Kitchen Aid mixer and mix well.
3. Divide batter into 12 muffin tins and bake at 350 for 16-18 minutes.
